Creamy Chicken Mushroom Soup

Preparing this luscious chicken mushroom soup is a breeze, requiring only six simple ingredients.

Part of my Batch Cooking Series, also known as meal prepping, it's a clever strategy to optimize the yield from your culinary endeavors without breaking a sweat.

A delectable, velvety, and satisfying experience—ideal for a cozy, rainy day!

Ingredients

  1. 12 small mushrooms (about 84g total)
  2. 6 medium chicken drumsticks (about 360g total)
  3. 6 cups of bone broth or stock
  4. 3 cups of heavy whipping cream
  5. 3 tbsp butter
  6. Salt to taste

Instructions

  1. Precook 6 medium drumsticks in an Instant Pot with 1 cup of bone broth. Cook on "Pressure" or "Manual" for 20 mins.
  2. Once cooked, remove drumsticks from Instant Pot and let cool.
  3. Once cooled, remove meat and discard bones.
  4. Wash and slice mushrooms and saute in butter.
  5. Add broth, cream, and chicken meat, and season with salt to taste.
  6. Heat soup over medium/high heat until heated through.
