Crustless Pizza - one of my all-time fav weekday lunches!

Crustless Pizza is one of my all time favorite weekday lunches. It is delicious, easy to prepare, can be transported and heated at the office if needed, cleans up well, and helps keep the carbs low. It is grain-free, gluten-free, egg-free, and nut-free. It suits a variety of dietary preferences and can be customized to suit just about any taste. It's also a great weeknight dish. Everyone in the family can customize their own. Ready in just about 15 mins, it's faster than delivery.

How to prepare Crustless Pizza

Crustless pizza is pretty easy to make and extremely versatile. It can be made with sauce or without. You can make your own sauce or you can use your favorite premade sauce. Ranch dressing, classic tomato sauce, bechamel, Bianca sauce (aka Blanca sauce or white sauce), or pesto are all great.

It can be made Carnivore Compliant with a bechamel or Bianca sauce or by omitting the sauce altogether.

It can be made with a variety of cheeses or without cheese. I like to use mozzarella and dollops of ricotta. It is also good with an Italian blend, Asiago, or whatever cheese you have on hand.

It can be made with a variety of toppings. Really, it can be made with whatever toppings you like. Pepperoni, salami, sausage, chicken, olives, peppers, mushrooms, onion, etc. Or, just have it with your favorite cheeses.

It can be made to suit a vegetarian diet or a carnivore diet by using toppings that are all veg or all meat!

I like to make crustless pizza as a way to use up any small amounts of odds and ends in the fridge. Some leftover grilled chicken, a bit of onion, a little diced tomato, and some sliced black olives in the fridge call out to me, crustless pizza!

How to eat Crustless Pizza

Obviously, you can't pickup and eat crustless pizza the same way you would its more crusty cousin. I eat crustless pizza with a spoon. I love picking up a stringy, cheesy, spoonful of cheese, sauce, and toppings! And bonus, my hands stay clean.
