Mountain Woman Breakfast - a mouthwatering way to start your day
I originally made this dish when I was out camping and that's how it got the name Mountain Woman Breakfast.
This dish is super versatile and delicious! You can make it using any kind of cheese or meat you like. It's a great way to use up leftovers.

Ingredients:
- 1 lb ground pork
- 8 oz cream cheese
- 4 oz sour cream
- 4 oz heavy cream
- 8 large eggs
- 4 tbsp butter
- 4 oz grated cheese (such as Swiss)
- Salt and pepper to taste
Instructions
- Cook ground pork until juices run clear.
- Add cream cheese, sour cream, heavy cream, and season with salt and pepper to taste. Heat over medium heat until well combined and thickened to desired consistency.
- Scramble 8 beaten eggs in 4 tbsp of butter.
- Layer ingredients beginning with eggs. Top eggs with gravy and top everything with cheese.
Subs & Adds
- You can sub in breakfast sausage, leftover corned beef, or chipped beef for the ground pork.
- You can use any kind of cheese you like or have on hand. I used swiss cheese for this recipe but the possibilities are endless.
- Sauteed mushrooms are also a great addition to this dish.
