Family-Favorite Cauliflower Gratin: A Cheesy and Effortless Holiday Delight
Cauliflower Gratin, aka Cauliflower Cheese, is rich, cheesy, and remarkably simple to prepare, earning its place as a holiday staple in our family.
And bonus: Preparation is straightforward, needing only a few ingredients.
Double bonus: When preparing other holiday dishes at different temperatures, this dish can be cooked simultaneously.

Ingredients
- 1 head of cauliflower
- 1 cup of mayo
- 8 oz grated cheese such as Gruyere, Asiago, Parmesan, Romano, Swiss, or a combination
Instructions
- Preheat oven to 375°F.
- Separate florets from head of cauliflower and discard stalk.
- Parboil florets in salted water.
- While florets are boiling, grate 8 ounces of cheese using a rotary grater, food processor, or hand grater.
- Remove cauliflower florets from water and shock in ice bath, then strain well.
- In a mixing bowl, combine parboiled and cooled cauliflower florets and 1 cup of mayo.
- Add grated cheese, reserving some to top dish later, and stir to combine.
- Pour cauliflower, mayo, and cheese mixture into baking dish and top with reserved cheese.
- Bake in preheated oven for 45 mins, or until top is golden brown.

Sharp cheddar cheese is also really good, as are Parmesan and Romano. There’s wiggle room on the cooking temp here, too.
