Shrimp Chowder - super simple and super delicious!
This shrimp chowder is very easy to make, yet its complex flavors will taste like you've been cooking all day.
It's gluten-free, grain-free, egg-free, and nut-free. Great for a variety of dietary preferences.

Ingredients
- 2 tbsp butter
- 1/2 yellow onion
- 2 garlic cloves
- 1/2 cup white wine
- 1/2 cup clam juice
- 1 cup lemony chicken stock (see Subs & Adds below for alternative)
- 1 lb deveined, tail-off shrimp
- 1/2 cup heavy cream
Instructions
- Melt 1 tbsp butter in a pot.
- Sautee 1/2 diced yellow onion in butter till translucent.
- Add 2 minced cloves and cook until fragrant.
- Remove pan from heat and add 1/2 cup white wine, 1/2 cup clam juice, and 1 cup of lemony chicken stock.
- Use immersion blender to blend until smooth.
- Return pan to heat and bring to a high simmer.
- Add 1 lb of deveined, tail-off shrimp, cut into bite size pieces.
- Cook until shrimp turns pink.
- Turn off heat and add 1/2 cup heavy cream.
- Serve garnished with sliced garlic chives.
