Chicken in a Bacon Cream Sauce - schedule friendly goodness!
This delicious, creamy, tender Chicken in Bacon Cream Sauce will easily please everyone's tastes.
It's a weeknight-schedule friendly, kid-friendly, dinner-party friendly, one-pot dish that will be ready in under 60 minutes and taste like you've been cooking all day.

Ingredients:
- 2 lbs chicken thighs or breasts
- 4 strips of bacon
- 2 tbsp butter
- 1/2 diced yellow onion
- 4 cloves of garlic, minced
- 4 fl oz heavy cream
- Splashes of wine or water for deglazing
- Optional: green onion, fresh herbs
- Optional: sliced white mushroom
Instructions
- Chop (or cut with scissors) bacon into small pieces and cook over medium heat until crispy.
- Remove bacon and all but 1 tbsp of rendered fat from pan and set bacon aside. Save the rendered fat for cooking another day!
- Preheat oven to 350 degrees Fahrenheit.
- Add 2 tbsp of butter to pan and cook 1/2 diced yellow onion until translucent, adding salt to taste.
- Add minced garlic and cook until fragrant.
- If using mushroom, add sliced white mushrooms and cook until softened.
- Deglaze pan with splashes of wine or water as needed.
- Add chicken and brown on both sides.
- Cover and transfer pan to preheated oven and cook until internal temp of chicken reaches at least 160 (about 20 mins).
- Remove chicken from pan and set aside.
- Return half the bacon to the pan and add heavy cream.
- Stir and heat over medium heat until well combined and thickened.
- Return chicken to pan and stir to combine.
- Top with remaining crumbled bacon.
- Optional: top with thinly diced green onion or fresh herbs.
Subs & Adds
- To make this dish fully carnivore, just omit the garlic and onion.
- Fresh herbs are a nice addition to this dish. Fresh torn basil leaves, lemon thyme, and/or sage are all great additions.
- If you don't have heavy cream, sub sour cream and a few splashes of water or wine to reach desired thickness.
